2008 Chardonnay

VITICULTURE
A variety of premium vineyard sites throughout South Eastern Australia were chosen for this wine. Fruit was selected for its color, flavor intensity and balance.
WINEMAKERS NOTES
The 2008 Black Opal Chardonnay is bright straw in color. Aromas of peach, melon and citrus develop into a crisp and delicious finish. The palate is soft and round with rich and persistent flavors of a tropical fruit salad.
VINIFICATION
Following harvesting, careful crushing and pressing ensured limited skin contact to enhance character whilst retaining subtlety. The juice for this wine went through a cool ferment to retain crisp fruit flavors, while certain parcels were chosen to undergo a moderate fermentation with French and American oak to develop complexity while retaining a fresh fruit focus.
